Ingredients
1 sheet puff pastry
250 g asparagus, trimmed
200 g mushrooms, sliced
½ onion, finely sliced
3 eggs
½ cup milk
½ cup grated cheese
1 tablespoon butter
Salt and pepper
Method
Preheat the oven to 190°C.
Place the puff pastry into a greased tart dish and press it gently into the edges.
Prick the pastry several times with a fork.
Bake the pastry for 8 minutes, then remove it from the oven.
Heat the butter in a frying pan and cook the onion and mushrooms until soft.
Add the asparagus and cook for another 3–4 minutes.
Whisk the eggs and milk together, then season with salt and pepper.
Spread the vegetables across the pastry base.
Pour the egg mixture over the vegetables and sprinkle the cheese on top.
Bake for 22–27 minutes until the filling has set and the pastry is golden.
Let the tart rest for a few minutes before slicing.
2. Strawberry and Yoghurt Breakfast Bake

Ingredients
2 cups strawberries, hulled and halved
2 cups Greek yoghurt
3 eggs
3 tablespoons honey
1 teaspoon vanilla essence
1½ cups cubed farm bread
½ teaspoon cinnamon
Method
Preheat the oven to 180°C.
Grease a medium baking dish.
Place the cubed bread into the dish and spread the strawberries over the top.
Whisk the yoghurt, eggs, honey, vanilla and cinnamon together until smooth.
Pour the mixture over the bread and strawberries.
Press the bread down gently so it absorbs some of the mixture.
Leave it to stand for 5 minutes.
Bake for 30–35 minutes until the centre has set and the top is lightly golden.
Serve warm with extra yoghurt and honey if preferred.
3. Roasted Beetroot and Carrot Salad
Serves: 4
Prep Time: 15 minutes
Bake Time: 35–40 minutes
Ingredients
3 medium beetroots, peeled and cubed
3 carrots, peeled and sliced
2 tablespoons olive oil
½ teaspoon salt
½ teaspoon black pepper
2 tablespoons honey
2 tablespoons lemon juice
½ cup mixed salad leaves
Method
Preheat the oven to 200°C.
Place the beetroot and carrots on a baking tray.
Drizzle with olive oil and season with salt and pepper.
Roast for 35–40 minutes until the vegetables are tender.
Mix the honey and lemon juice in a small bowl.
Allow the roasted vegetables to cool slightly.
Arrange the salad leaves on a serving plate.
Add the beetroot and carrots, then drizzle the dressing over.
Serve immediately.
4. Courgette, Mushroom and Cheese Omelette

Ingredients
4 free-range eggs
1 small courgette, grated
½ cup sliced mushrooms
¼ cup grated cheese
1 tablespoon milk
1 tablespoon butter or oil
Salt and pepper
Method
Whisk the eggs and milk together in a bowl.
Season with salt and pepper.
Heat the butter or oil in a frying pan.
Add the mushrooms and cook for 2 minutes.
Add the courgette and cook until softened.
Pour the egg mixture over the vegetables.
Cook over medium heat until the base has almost set.
Sprinkle the cheese over one half of the omelette.

4 slices of farm bread
2 cups fresh spinach
2 spring onions, finely sliced
½ cup grated cheese
1 tablespoon butter
Salt and pepper
Method
Preheat the oven to 190°C.
Melt the butter in a frying pan.
Add the spring onions and cook for 1 minute.
Add the spinach and cook until wilted.
Season with salt and pepper.
Place the bread on a baking tray and toast for 4 minutes.
Spoon the spinach mixture over each slice.
Sprinkle cheese over the top.
Return the bread to the oven for 5–6 minutes until the cheese has melted.
Serve warm.
6. Strawberry and Honey Crumble
Serves: 6

Bake Time: 30 minutes
Ingredients
3 cups strawberries, hulled and halved
½ cup flour
½ cup rolled oats
⅓ cup sugar
75 g butter
2 tablespoons honey
½ teaspoon cinnamon
Method
Preheat the oven to 180°C.
Place the strawberries into a baking dish.
Drizzle the honey over the fruit.
Mix the flour, oats, sugar and cinnamon in another bowl.
Rub the butter into the mixture until coarse crumbs form.
Spread the crumble mixture evenly over the strawberries.
Bake for 30 minutes until golden and bubbling.
Allow it to cool for a few minutes before serving.
7. Spring Vegetable Frittata
Serves: 4
Prep Time: 15 minutes
Bake Time: 20–25 minutes
Ingredients
6 free-range eggs
½ cup chopped tomato
½ cup chopped peppers
½ cup sliced mushrooms
½ cup chopped spinach
¼ cup grated cheese
1 tablespoon olive oil
Salt and pepper
Method
Preheat the oven to 180°C.
Heat the oil in an ovenproof frying pan.
Add the mushrooms and peppers and cook for 3 minutes.
Stir in the tomato and spinach.
Cook until the spinach has wilted.
Whisk the eggs and season with salt and pepper.
Pour the eggs over the vegetables.
Sprinkle the cheese over the top.
Cook on the stove for 3 minutes until the edges begin to set.
Transfer the pan to the oven.
Bake for 20–25 minutes until the centre has completely set.
Slice and serve warm with toasted farm bread.
